Ramp and Cheddar Biscuits

Ramps are one of the first signs that spring has sprung here in New England. These wild spring onions are a treat, just please make sure you harvest them sustainably! (Scallions can be used as a replacement if you can’t find any ramps)

Ingredients:
1 large egg
2 ramps, washed and chopped
1/4 tsp sea salt
1 cup almond flour
2 tsp baking powder
1/2 cup shredded cheddar cheese

Instructions:
Preheat your oven to 350 degrees F. Line a baking sheet with parchment paper.

In a medium bowl, whisk together the egg, ramps, and salt. Using a rubber spatula, mix in the almond flour, then the baking powder. Fold in the cheese.

Using a 2-tablespoon scoop, place 6 mounds of the dough on the prepared baking sheet. Do not flatten the mounds.

Bake until golden, 15-18 minutes. Serve warm.
